We're getting more and more of the summer crops each week, and are happy to share the abundance with you. If you find you have too much to eat in a week, make a huge batch of something (e.g. sautéed summer squash, tomato sauce). Then eat some during the week, and freeze the rest for a ready to re-heat summer meal in the depths of winter.

CUCUMBERS - Try a refreshing cucumber salad, or cut them into batons for a veggie dip
TOMATOES - Make our Mom's favorite summer salad -- just chunk up tomatoes and cucumbers (plus onions or garlic if you like), and toss with olive oil and salt. (No vinegar needed because of the acid in the tomatoes.) You can eat this salad morning, noon, and night, like people do throughout the middle east.
CARROTS or BEETS - your choice!
PEPPERS or BEANS- ditto!
POTATOES - there will be a number of varieties -- all good for a potato salad -- or for baking or frying.
SWEET CORN - There not much easier or better than corn on the cob!
SUMMER SQUASHES -- These are very versatile -- great on the grill, in a soup, stir-fried or sautéed, or grated and made into cupcakes or a cake. Take a look at the About Summer Squashes entry in the Food & Farm Notes for more information and recipes.
