At Henry's Vegetable Stand...
Last week's market stand was about double the size of the previous week, and we may be doubling it again this week, so be sure and come to the market -- even if it's cloudy or raining -- for an abundance of beautiful vegetables, including tender pea shoots, and lots of great spring radishes.

Radishes popping out of the ground . . . |
How to use radishes, you ask? Let me count the ways, I say! They are nice in green salads, of course, but they also add crunch and spice to potato salads and pasta salads. But they are fantastic sauteed in butter until they're soft and sweet. And they're also great in stir-fries. Check out the recipes!
Henry says it was great to see everyone last week, and to see the spinach leap off the table like hotcakes. Because that was so much fun, and because spinach is a cool-season crop, and it's heating up quickly down here in central Illinois, Henry will once again have the 2 for $5 Spinach Special. And you do need at least two bags. Last week one person got one bag, but then came back saying she'd already eaten half of it on her way to the car, and needed another bag. So save yourself time and money with the two-fer deal!
Senior citizens are often given discounts, and there's nothing wrong with that, but Henry wants to give Junior Citizens a break. So he's giving anyone in their 20s a 20% discount. And that's not all!! He's decided to extend it to anyone with a child under 20 months old, and that includes the un-born. So if you are under 30, or have a child under 20 months, or are pregnant, let Henry know and you'll get 20% off!

Want to help at Henry's Market Stand?
Because you're reading this email, chances are you farm-fresh produce, and regularly go to the Evanston Market . . . and so you are potentially one of our market helpers!
As we move into high season, Henry needs more helping hands to unload the truck, set up the stand, sell and re-stock vegetables, and then help pack everything up at the end of the day. If you're interested, and would like more details, please get in touch with me (Terra) or Courtney. Thanks!
Want to help at Teresa's Market Stand?
Teresa also needs more people to help set up, serve customers, and take down her stand. If you're interested, talk to her about it on Saturday.
At Teresa's Fruit and Herb Stand...

We need to make room in our truck for strawberries, and all the plant starts need to get in the ground, so all of the following plants will be BUY ONE, GET ONE FREE!
Last Chance for KALE and SWISS CHARD plants!
The kale and swiss chard are outgrowing their pots, so after this week I will donate them to worthy causes.
FRESH HERBS -- First week for dill and parsley!
When our stand is overflowing with garden starts, sometimes people don't even see our fresh herbs, even though we have two or three tables full of them. Don't overlook them this week, because we have lots of feathery dill (try our recipe for Beets with Chives and Dill), big bunches of oregano, and eleven (yes, 11!) kinds of fresh-cut mint. You can smell them all and pinch off a leaf or two (or 11) to see which ones you like best.
And don't forget thyme, chives, and parsley---three herbs that go with just about everything!
