The light, sweet taste of the pea shoots goes well with the light, sweet taste of green garlic in this super quick and easy recipe.

1 stalk green garlic, sliced into thin rounds, or minced
2 tablespoons olive oil
2 cups pea shoots, loosely packed
Salt and Pepper, to taste
Heat the oil and garlic in a skillet and stir the garlic until softened. Add the pea shoots, and stir to coat with oil. Cook, stirring, for 2-3 minutes, until the shoots have wilted. Add salt and pepper to taste. Serve as a side dish, or as a simple supper with buttered toast.
OPTIONAL, with EGGS: Add the stir-fried pea shoots and green garlic to scrambled eggs or a quiche.
